I wouldn't overthink it. If they're gonna like BfW they're gonna. : ) (You can lead a horse to water, but you can't make it drink hehe)
But keep it simple. default era, one of the mainline maps (small, fast game so you can weed out the one's who are never gonna like the game quicker and then move on). Fog I'd say leave at map default which is usually on. No point misrepresenting the real game.
